    Don't they extract Maps?
Like if you put them into your WoW folder in run them, they extract all the maps and you move it to the Private Servers Folder?

The ad.exe is used to make the MAPS for ascent. Maps is used to be able to explore the map, i.e reveal a part of the world. VMAPS is used to (at least of what I've heard) avoid npc's walk through walls and gameobjects.

Maps allow Various things to happen when they are extracted. First off as reflection stated they allow you to explore maps and such as you walk around.. if they arent present you will still get the message that you have explored the area but it will never be visible on the map. Also they allow you to see members of your party and where they are on the map. If they arent extracted you wont be able to see your party members until they are close enough to be seen on the mini map.

Vmaps- Vmaps work on a vertex based system that allows for the usage of LOS and such. Meaning yes if a mob cant SEE you it cant aggro you through such things as Terrain or Walls or Buildings. It also restricts players as they cannot attack things they cannot see ( as it should be) ..

Servers that do not have Vmaps installed can be very messed up PVP wise as casters can nuke or dot opponents through walls and such and Melee characters cant hit them back.

Maps also enable free-for-all flagging in zones such as the Gurubashi Arena.

Should be several extractors around the forums. There's also one in the svn of arcemu.
