Well the problem with warriors is the healing problem, sure you can get loads of armor and stamina but it wont help you that much.
I used to play a warrior and I had some BT/Hyjal gear and I did find it hard to solo any instance in tbc, sure you can manage some packs but you will end up wasting your time and money.
The problem is also there in the most 60 instances even if you're 70, you'll probably end up geting killed by the bosses since you dont have any ability at all to heal yourself during a fight.
When you ask for the best spec to soloing I hope you mean like doing dailys and such. I prefer being fury specc when just grinding and questing.

Some people would like to have impale instead but its waste of talent points to get there since it wont give you that much when using 2 weapons. Sure, its a good talent but not that necessary when dual-wielding.
The PVP gear is like it says PVP gear, it sure does it work in the battlegrounds and the arenas with the stamina and resillence and you should top that with a bad ass 2-hand weapon. For grinding/questing and such it sure is viable and the stamina from the PVP-gear can come handy. But I still place my bets on PVE-gear while grinding since you often has a higher dps-output than with PVP gear.

Well as for most soloing, ofcourse dps gear and specc is usually perfered due to faster killing; however for instance soloing I would say protection and block value / block rating gear all the way (by having an high enough block value you can completely nullify an enemies' pyshical attacks, and having more block rating means you can keep blocking this amount of damage for when shield block is on cooldown.)
I'm no expert on warrior instance soloing, as I am a Paladin tank, however I understand it is possable to solo some 20 man level 60 raid bosses as a warrior stacking block value and block rating and then having a way to heal yourself (set bonuses or trinkets come to mind). Here's a video of a protection warrior soloing High Priest Thekal, a 20 man raid boss in Zul'Gurub (this is not my video).

You should be able to solo most low level instances, up to the raid ones.
for the TBC instances you might have problems becouse you can't heal, try soloing underbog on normal, I play a paladin and its the only tbc dungeon I can solo atm.
as for the pvp gear, its decent, it gives you resilience so the mobs wont crit you as much, but you will still get crushed. It's better then blues, but t6>pvp gear when soloing dungeons.
Theres not much you can do as a warr, Protadin can do alot as far as tanking.

I think the best for soloing level 60+ instances is protection.Although dps is good and faster,it often leads to quick death,but with protection and a good(lets say tier 5) gear and some healing pots i don`t think you`ll have much trouble,all you will be needing is some patience :P Good luck!
