WPE - Understanding Packets (WoW) 2.4.3

So I've been messing around with WPE lately, attempting to discover 'Exploits' on a few 2.4.3 patch WoW servers. Most of the 'filters' that have been released to the public have either long since been patched, or simply do not work. Now, I'm simply asking for a breakdown on understanding the packets, and deciphering them into something I can use. I well versed in HEX so that's not a problem. I have some previous networking experience working with Java and C++, so giving me a brief explanation shouldn't be to difficult. Also, if you happen to have a resource, such as documented packet functions for 2.4.3, I'd gladly accept that. Yes, I have already used Google.
