Can someone tell me how they knocked ALL of them off at once as a CW? Simply pushing them away with Shield doesnt work for me :P

In case of NW-DOYC5GOUR, cast shield when you enter. Jump onto the wall blocking the ogres and detonate shield before the ogres scatter. There's really not much to it.

how is that possible that u are getting full level each run? I knock down most of them and I only get like 2-3 bars of exp

You only get an entire level if you knock them all off at once. If you are using Repel instead of shield, your XP will cap at 2 bars. If use shield for the aoe knockback, then you get credit for all ogres before the cap is reached.
