To me, the way this cheat works seems to be: a separate program captures all messages sent from the client and changes the player coordinates. This way, on client your character seems to behave normally, but on the server (and other clients) your character seems to be underground - leading to you seeming to be invisible/invincible. Same program also messes with the jump, fiddling with the coordinates.

If this is the case, the fix might be harder to do: coordinate desync can happen accidentally, and thus detecting coordinate desyncing doesn't only reveal hackers, but also innocent players -> it can't be used as a way to detect hackers. Moving checks from client to server causes more load on the server - more load = more lag. Something like detecting players underground can also hit innocents, so it also isn't a viable way to detect. Encrypt/decrypt also adds a load to the server and client.
