Proxy - Sniffing

Hi together,

I'm searching for a Windows proxy Server that allows me to "sniff" all the traffic.

Background: i have a Application on my Handheld and I just want to record the initial connect and the Response. I know how the Data is encrypted and what is send, but i need the Data ;-).

Hopefully someone has an idea ...
