I was wondering, is it possible to change a pants .m2 into a robe .m2? for example, my paladin has pants on, but i want him to be wearing t2 pants, which is a robe shaped thing. I realize that there is no .m2 files for pants, chest, boots ect. but i was wodering if i could change more then just the textures. thanks.

yes, i believe so. But it might require a DBC change, since robes and pants are designated in the item statistics, and changing the blp doesnt change the actual model.
