Your question is quite confusing, but i think i can safely awnser this with a simple "no". I don't think its possible to see what will drop;p
First of all i have to say, that i'm totally new to this forum. So please just tell me kindly if my question has already been answered/discussed in another thread.
So here is what it's about:
As you know, Blizzard confirmed, that "Loot is generated upon creation.
As soon as you step into an instance, or a mob is created in the world, the loot that's going to drop has already been determined.".
And as you know, too, with wotlk all Mounts were changed to use-items, which means they are gone once learned. This is useful, as the itemquery will still show "retrieving server information" until the "Reins" have been seen by the server again.
My question: Is it possible to use the itemlinking method by just spawning an instance (ZG, utgarde, stratholme) to check if the mount is going to drop or not? And if so, do we have to reset the instance everytime we walk out or is it enough to just walk in and out? And is it necessary to walk near the Boss for him to spawn, or does he spawn upon entering the instance?

I don't understand how this would work. As long as the server has seen a given item once, it will work regardless of whether it is "in" that particular incarnation of the instance or not. I guess it might work if no one on your server has say, the Baron's Mount or the Raven Mount, but at this point in the game it's likely there's at least one on your server.
This is wrong. You can check this yourself. The itemcache resets every Server restart. And as the Chars with the Baron Mount do NOT have the Deathcharger's REINS anymore, the item won't be linkable.

I've never heard of the itemcache being reset on server reset, but I'll take your word for it I suppose.
However, one would think if your theory was the case I'd never be able to link [Deathcharger's Reins] as the server hasn't seen it since no one has the technical item anymore. But I can link it without d/c.
I'm sorry, I think it's a nice theory, but I don't think it would pan out in reality.
By all means, I'd love to be proven wrong though, as this would indeed be epic if it worked.

No. I don't believe this would work.
After server restart (tuesday on US, i guess) delete your itemcache file in your cache folder. Log in and try to link any of the rare mount's reins. It will only show "retrieving item information". I tried this myself several times over the last few weeks trying to get that time-lost proto drake. And indeed, after someone told in the channel that he just got it, the item was suddenly linkable. After the server restart it wasn't linkable again until someone found it.

Someone else had a long thread going trying to figure out how to do this. I dunno. It sounds plausible.

well what you could do use after a server restart
you can go into an instance (if you see somone with the item near you or somone links it it wont work) and open something like atlas loot and query for it if it doesnt show up that too bad but if it does than its possible that the item is most likely going to drop
