    is there any tool for tracking herbs/mines on the entire map?

    I saw a hack a while ago in the hacks section that allowed viewing of multiple trackings, but I don't know if you can use it to view everything at once, as well as what I mentioned is probably fixed by now.

    There's an addon called Gatherer (Gatherer addon for World of Warcraft), which will remember where you've found a node previously, and put a marker there. You can also download a completed set, and it'll know where all the node locations are. You can even use Cartographer_Routes with it to have it generate the best path to check all the nodes.

    As for nodes that have mines/herbs actually spawned on them, your client doesn't get that information until you are in range, so it would be impossible to make a program that could see all the spawned nodes on the map.

    i used addon Gatherer and it was prety cool when i increased skill in mining (1-100 i needed a lot of copper and tin ore)
