New Models on Old Builds (WoTLK, etc)

Hello,

I used to have a private server, but it's been awhile, and I see things have come a long way since I had mine. What I'm curious about, though, is if you can use the newer models on an older server build, such as WoTLK Trinity/Mangos, etc but use the newer high rez models?
