The Lore thread is allready present, as a sticky in WoW general 
I will try to answer as good as I can. Lore doesn't say much about Kul tiras and Gilneas, but the Maelstrom and Illidan I can tell you a lot about ^^
First of all: Illidan.
After 10 thousand years of imprisonment, Illidan Stormrage, Malfurion's brother was freed by Tyrande Whisperwind. Illidan was captured because of his betrayal to the Night Elf race during the first war. Illidan was set to help Tyrande and Malfurion vanquish the Scourge and Burning Legion from Kalimdor, but when he heard about the artifact The Skull of Gul'dan, he claimed the artifact and it's powers for himself, and he got turned into a powerful demon. His new powers greatly changed him, and he also later allied with the Blood Elfs and Naga, under his master Kil'Jaeden. He was told to stop Arthas and the Scourge from reaching The Frozen Throne in Icecrown, but he failed, and Arthas banished him to the shattered Outland.
To answer your question, Illidan was a Night Elf, untill he was corrupted by Fel Power and grief that changed him into a powerful winged demon.

About Gilneas and Kul Tiras: Kul Tiras is a island That lies just of the cost Khaz Modan. The island is inhabited by Humans and dwarfs, and a small amount of High elves and Goblin. It was once powerful in sea battles, but most of it's fleets were destroyed by the Scourge.
Gilneas: This land lies just below Silverpine, and it's leader Genn Greymane made the Greymane wall to keep it isolated from the world around. This was because he did not want to care about other nations troubles, and meant they could take care of themselves.

The Maelstrom.
For ten thousand years ago, there was no Eastern Kingdoms. It was Kalimdor, a great circular continent, with the Well of Eternity in it's center. In the end of the First War, the well was shattered, with a lot of forces fighting for it. The well was the Burning Legion's "waygate", and at the same time it was the Old Gods passageway to the living realm. Rhonin, Malfurion, Illidan and Tyrande fought for the well togheter with all the dragonflights, with an exception of the Black, since this was just after the creation of the Demon Soul. The well was in the end shattered, and with it the world teared itself apart, splitting into two continents, and where the Well once had been it was now the Maelstrom. The powers of the well was gone, but Illidan had taken some of it's water, and made a new well below the World Tree Nordrassil.
I can make a new thread for general lore, but thought it wasn't needed since it's allrdy a sticky about it 
Only the Illidan part here is from the Warcraft III series, and this thread was originally made to help people through the WCIII game

I have never ever seen anything about the Undermine in warcraft lore acctually. I can check on a lore-forum
